Farmers Market Loot, July 19

Holy loot! We’re really getting into the season now.

Dines Farm: 2 chickens, 1 garlic sage sausage, 1 sweet Italian: $35.
The Orchards of Concklin: 4 quarts sour cherries (I know, I’m a freak. I’m going to make the maraschino cherry recipes that was in the Times yesterday); 1 quart sweet cherries (I’m also going to make the brandied cherry recipe from the same article); 2 pints blueberries (I’m giving those to my friend Mark, who makes a killer blueberry streusel); 1 pint currants 3 apricots; 8 yellow peaches and a pint of sugar plums (my husband’s favorite): $45.

Blooming Hill: 8 cucumbers. $7.

R&G Produce: Leeks, onions and cilantro: $5.50.

Panzarella: 1 large mozz. $8.50.

The Jam Man: 1 pint gooseberry-raspberry jam: $6.

The Baker’s Wife: 1/2 loaf cranberry pecan bread: $5.50.

Total: $112.

I’m going to make a batch of chicken stock this weekend — hence the leeks, onions and chickens (I’ve got carrots, celery and parsley in my garden). I’m totally making those maraschino cherries (I think they’ll be great as a garnish to Aviation cocktails). How about an tart, too? Apricot-sweet cherry? Plum-peach? As for the cukes — I’m thinking cocktails. Gin?

Unless of course, you have better suggestions? Let me know.

And if you’ve got a recipe you want to share, don’t forget to come see me at the Peekskill market at 9:30 a.m. Saturday. I”ll be there making corn salad with chef Jonathan Pratt of Peter Pratt’s Inn and Umami Cafe. You can enter the Locally Grown recipe contest in person.

Those cukes call for a classic Pimms Cup cocktail.

Fill a collins glass (tall, narrow) with ice, Mix 1 part Pimms #1 with two parts Sprite or 7-Up (or ginger ale, but then you have to add lots of lemon). Stir this, then top off with club soda. Stir again. Garnish with a skice or wedge of cucumber (preferably a kirby, but any will do).

    Rockin' Deven! Thanks!

Here's a Hungarian cucumber salad that should take care of some of your garden cukes.

2 cucumbers, peeled and thinly sliced
1 large onion, peeled and thinly sliced
    1/4 cup water
    1/4 cup white vinegar
    2 tsp sugar
    Pinch of paprika

Put cucumbers in a bowl and cover with 1 Tbs salt. Incorporate salt with hands so all cucumbers are covered. Sweat for 30 minutes (or more if using more cukes).

Squeeze out water and put cucumbers in medium bowl. Mix water, vinegar, sugar and a pinch of paprika together in small bow. Add onions and liquid mix to cucumbers. Stir until fully mixed together. Refrigerate for 1-1/2 hours.

Top with sour cream and dill.
