Initial thoughts: lots of gluten-free stuff and lots of “bites,” as in smaller portions. (I applaud!) Also the usual teas and vinegars. Here’s a beautiful pot from Tea Forte.

Food correspondent Jill Black told me to also look for loose flower teas, and I’m seeing that, as well as actual flowers, like this hibiscus flower you add to champers:
