Locally Grown, Readers’ Choice: Chilled Cucumber Soup

Joseph Apollonio’s garden in Ossining always produces tons of cucumbers and there is only so many salads that he can make.

One day, he was playing around in the kitchen and after many tries and cucumbers came up with a soup he liked. He entered it in the Locally Grown recipe contest. What do you think of Apollonio’s recipe? Vote below. The reader favorite will win a cookbook.

Chilled Cucumber Soup
Makes 4 to 6 servings.
5-6 cumbers, depending on size
1 yellow bell pepper, chopped
1 red bell pepper chopped
2 green onions chopped
1 jalapeños minced
2 tablespoons chopped cilantro
1 tablespoon finely chopped basil
1 tablespoon chopped dill
4 garlic cloves smashed to paste
1 tablespoon Old Bay seasoning
1/4 teaspoon cayenne pepper
2 cups sour cream
3 cups yogurt
3 tablespoons olive oil
2 teaspoons white wine vinegar
2 tablespoons minced chives
1 cup crème fraiche
Salt and pepper to taste
Combine cucumbers, bell peppers, green onions, jalapeno, cilantro, basil, dill, garlic, Old Bay, cayenne, sour cream, yogurt, olive oil, and vinegar.
Working in batches puree in a blender until smooth, transfer to a bowl put in refrigerator until chilled at least 2 hours.
Transfer to bowls garnish with a 1 tablepoons of crème fraiche and chives.
