OK so here’s a new feature: One Great Dish. When I find something really, really delicious… I’ll ask the chef how it’s made and feature it in a video. First up: Chef James Cawley of White Plains restaurant SOMA 107, who gets the prize for his Pig N2 — an amazing combination of pork trotter and shoulder that’s braised, then breaded and fried. Yeah.
